This week I’m talking
balls. Healthy, tasty, satisfying, dense and oh so nutritious. I pack these
babies when I’m invited to dinner or a function, as a gift or just when my
darlings request them. These are blissfully simple and one of the yummiest
guilt free treats around.
I’m referring to Raw
Carrot Cake Balls. This recipe was
brought to my attention by my dear friend Jennifer Birkhead (who will no doubt
feature as a guest post-er in the coming weeks so please keep your eyes peeled
and get ready to soak up some brilliant wisdom!). Jen can be found over at
Vivid Health and Fitness where she practices what she preaches and is on a
mission to spread the message of healthy living to everyone who’ll listen!
So delve into your
kitchen cupboards, grab your food processor, borrow some carrots from ole mate
Bugs Bunny and get on it!
Raw Carrot Cake Balls
1 cup almonds
½ cup walnuts
¼ cup pecans
6 medjool dates
(pitted)
¼ cup raisins
1 tspn coconut oil
¼ cup shredded coconut
2 large carrots
(roughly chopped)
1 Tbspn ground
flaxseed
1 tspn cinnamon
Pinch of nutmeg
Combine all of these
ingredients in a good high speed processor. The mixture should be reasonably
crumbly and then can be moistened when squeezed. Form the mixture into small
balls and you can dust these in extra cinnamon, or roll them in additional
shredded coconut – up to you darlings!
