FEED ME MONDAY - The 'I can't believe this is healthy' Edition


Hey diddle diddles! Hope you are all very well and spent the weekend appreciating all things big and small that made up your ‘present moment’.

With my tummy finally settled and actually able to stomach some nutrient dense food - I had an idyllic weekend spent with D – getting all our bits and pieces in order for the big move scheduled for next weekend; visiting the house and morning cuddles. Between you and I, the most enticing aspect about the move is the first day I get to play around in that kitchen – hooley dooley. D and I are still deciding what our first meal might be to christen the house. Suggestions welcome of course! But it’s MY job to share the recipe suggestions today and so today I’m keeping it simple and givin’ you a sweet little dessert that tastes amazing with a cup of tea at the end of a hard day – mmm! Super simple, super tasty, super nutririous. This is a no measurement recipe, just done by feel so please play around with it and find what floats your boat. I’ve tried to guestimate measurements but am by no means certain! Apologies in advance if you end up with over chocolately dates – oh who am I kidding, there’s no such thing as ‘too chocolatey’!

Stuffed Dates (two ways)

Serves 4 (one of each baby!)
8 Medjool dates
Coconut oil
Raw cacao powder
Whole or crumbled walnuts
Nut butter (cashew/almond/brazil)
8 almonds

Place approximately 2 Tbspns walnuts into a mortar and pestle or food processor until it mixes to a fine powder. Add a splash of coconut oil into a separate bowl and add nut mixture and approximately 1 Tbspn of cacao. Mix all ingredients together until a paste forms. It should start to resemble the consistency of a grainy nutella or nut butter.
Slice medjool dates down the middle, remove pip and slather 4 with the cacao mixture and one with the plain nut butter. Sprinkle a few left over crumbies or additional crumbled walnuts on top of the cacao dates and stuff a whole almond into each of the gloriously stuffed dates (both cacao and nut butter stuffed).
Share with three people who you love dearly or pack them away for some solo midmorning, afternoon tea or after dinner yummies. Eat slowly and mindfully and be completely blown away at the caramely, velvety and irresistible taste of these all natural treats from mother earth herself.

  2. Yum! These sound amazing!!!! I've made date and nut balls using all of these ingredients but I've never actually stuffed dates before. Great idea (plus they look way yummier than a smooshed up ball!) xx
